Madras spice mix contains: Onion, Garlic, Ginger, Tomato, Turmeric, Paprika, Chilli, Cumin, Paprika, Coriander, Turmeric, Mustard, Bengal Gram, Salt (Trace), Fenugreek, Fennel, Cinnamon, Ginger, Garlic Powder, Black Pepper, Cloves, Bay leaf, Nutmeg, Methi Leaf, Cinnamon, Bay leaf, Nutmeg.
Recipe (Serves 4)
To make Madras you will need the following additional ingredients
500-800g chicken, or you can use: lamb, beef, firm fleshed fish, king prawns, eggs, paneer or pre cooked vegetables
5 tbsp vegetable oil for the curry
1 dsp (10ml) lemon or lime juice
1 tbsp of tomato purée
½ cup fresh finely chopped coriander
1 tsp salt
